Place the mixture in a bowl or food processor fitted with a steel blade. Cut in cold butter into cubes and shortening with a pastry blender or give the food processor ten to fifteen 1 second pulses, until the dough is crumbly and the butter and shortening are the size of large peas. Gradually add ice water and mix until dough sticks together, adding additional water as needed. Divide the dough into 14-15 oz. portions and flattened into disks. Wrap tightly in plastic wrap and refrigerate for at least 1 hour. Remove the dough from the refrigerator and let it rest at room temperature until it is malleable. Meanwhile, preheat a convection oven to 400°F (conventional 425°F). Roll the cooled dough into a 12 inch circle
